Recipe for donut muffins

2 Cups Flour
4 tsp Baking powder
1 Cup Sugar
Pinch Salt
I egg
1 Cup Milk
1 Tbsp Lemon Juice
! tsp Vanilla Essence
Any fruit jam of your choice, I used Raspberry
Topping:
50 Melted Butter
1\4 Cup Sugar
1\2 tsp Cinnamon

Method: Pre heat oven to 180C
Add lemon juice and set aside for 5 minutes. {This will make buttermilk}
Add flour, baking powder, sugar and salt into a mixing bowl. In another bowl add the wet ingredients and buttermilk. Mix together and pour into dry ingredients. You can add extra  milk if the mix is to dry. In a muffin tin place in paper cups or spray tins with oil. Place 1 tablespoon of muffin mix into the tins. Add 1 tsp of jam on top and then place another tbsp on top of that or until it fills the tin to 3/4 fill. Bake in heated oven for 12-15 minutes. Melt the topping butter and mix the sugar and cinnamon together. While to muffins are warm brush the melted butter and dip into the sugar and cinnamon mix. MMMMMMmmmmmmmm. AND ENJOY!!!!!!
